- 3 large eggs, separated

Instructions
- Preheat the oven to 350°F (175°C).
- Melt the dark chocolate and butter together in a double boiler, stirring until smooth.
- In a separate bowl, whisk the egg yolks with sugar and vanilla until pale and creamy.
- Fold the melted chocolate mixture into the egg yolk mixture.
- In another bowl, beat the egg whites until stiff peaks form, then gently fold into the chocolate mixture.
- In a separate bowl, whip the heavy cream until soft peaks form, then fold in the cherry puree.
- Combine the chocolate mixture with the cherry cream mixture until well blended.
- Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
- Garnish with fresh cherries before serving.
