- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup pistachios, finely chopped
- 2 cups fresh or canned cherries, pitted
- ½ cup cherry juice or syrup
- 2 tablespoons cornstarch
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs with melted butter until they resemble damp sand. Press this mixture into the bottom of your springform pan and bake for 10 minutes to set. Allow the crust to cool completely.
- In a large mixing bowl, beat together softened cream cheese and powdered sugar until smooth. Scrape down the sides to ensure consistency.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Stir in vanilla extract and the finely chopped pistachios.
- Pour the filling over the cooled crust and smooth the top with a spatula.
- In a saucepan, cook cherries, cherry juice, and cornstarch over medium heat until thickened (about 5-7 minutes). Pour the cherry topping over the cheesecake.
- Refrigerate for at least 4 hours or overnight before serving.
