A comforting dish of tender chicken and hearty potatoes enveloped in a rich, creamy garlic Parmesan sauce.
Ingredients

- 4 boneless, skinless chicken thighs or breasts
- 1.5 pounds baby potatoes, halved or quartered
- 2 tbsp olive oil
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2–3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper.
- Add the chicken to the skillet and cook until golden brown on both sides, approximately 5-6 minutes each.
- Remove the chicken from the skillet and set aside.
- Add the minced garlic to the same skillet and sauté until fragrant, about 1 minute.
- Pour in the heavy cream and stir to combine.
- Mix in the grated Parmesan cheese until melted and creamy.
- Toss in the baby potatoes to coat them in the sauce.
- Nestle the chicken on top of the potatoes.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh parsley before serving.
Notes
Feel free to substitute chicken with pork or turkey, and use different types of potatoes based on availability.
