Chicken and Potatoes with Garlic Parmesan Cream Sauce

Description

A comforting dish of tender chicken and hearty potatoes enveloped in a rich, creamy garlic Parmesan sauce.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1.5 pounds baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 23 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper.
  3. Add the chicken to the skillet and cook until golden brown on both sides, approximately 5-6 minutes each.
  4. Remove the chicken from the skillet and set aside.
  5. Add the minced garlic to the same skillet and sauté until fragrant, about 1 minute.
  6. Pour in the heavy cream and stir to combine.
  7. Mix in the grated Parmesan cheese until melted and creamy.
  8. Toss in the baby potatoes to coat them in the sauce.
  9. Nestle the chicken on top of the potatoes.
  10. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.
  11. Garnish with fresh parsley before serving.

Notes

Feel free to substitute chicken with pork or turkey, and use different types of potatoes based on availability.
