Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn kernels (fresh or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and garlic, sauté until translucent.
  3. Stir in the shredded chicken and corn, cooking for a few minutes.
  4. Add the chicken broth and thyme, bringing the mixture to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Stir in the heavy cream, and season with salt and pepper.
  7. Cook for an additional 5 minutes, then serve hot.

Notes

  • For a thicker chowder, you can blend a portion of the soup and mix it back in.
