- 2 cups cooked chicken, shredded
- 2 cups corn kernels (fresh or frozen)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced onion and garlic, sauté until translucent.
- Stir in the shredded chicken and corn, cooking for a few minutes.
- Add the chicken broth and thyme, bringing the mixture to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in the heavy cream, and season with salt and pepper.
- Cook for an additional 5 minutes, then serve hot.
Notes
- For a thicker chowder, you can blend a portion of the soup and mix it back in.
- Feel free to add diced potatoes for extra heartiness.
- This chowder can be stored in the refrigerator for up to 3 days.
