- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp garlic, minced
- 1 tsp ginger, minced
- 1 cup rice noodles
- 1 cup mixed vegetables (carrots, bell peppers, cucumbers)
- Fresh cilantro for garnish
- Chopped peanuts for topping
Instructions
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, and ginger to create the marinade.
- Add sliced chicken to the marinade and let it sit for at least 30 minutes.
- Cook rice noodles according to package instructions and set aside.
- Grill or pan-fry the marinated chicken until fully cooked.
- In serving bowls, layer rice noodles, mixed vegetables, and grilled chicken.
- Garnish with fresh cilantro and chopped peanuts before serving.
