Description

A refreshing and healthy wrap filled with chickpeas, cucumbers, and Mediterranean flavors.


Ingredients

  • 1 cup canned chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 whole wheat wraps

Instructions

  1. In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and feta cheese.
  2. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Lay out the whole wheat wraps and evenly distribute the chickpea mixture onto each wrap.
  5. Wrap tightly and slice in half to serve.

Notes

  • For a vegan option, omit the feta cheese.
  • Feel free to add other vegetables like bell peppers or spinach.
  • This wrap can be made ahead of time and stored in the refrigerator.
