Ingredients

- 1 cup canned chickpeas, drained and rinsed
- 1 medium cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 whole wheat wraps
Instructions
- In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss to combine.
- Lay out the whole wheat wraps and evenly distribute the chickpea mixture onto each wrap.
- Wrap tightly and slice in half to serve.
Notes
- For a vegan option, omit the feta cheese.
- Feel free to add other vegetables like bell peppers or spinach.
- This wrap can be made ahead of time and stored in the refrigerator.
