Description

Chickpea Shawarma Lettuce Wraps are a delicious and healthy alternative to traditional wraps, packed with flavor and nutrients.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 tablespoon shawarma spice blend
  • 1 head of romaine lettuce, leaves separated
  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/4 cup tahini sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil and shawarma spice blend.
  3. Spread the chickpeas on a baking sheet and roast for 20-25 minutes until crispy.
  4. While the chickpeas are roasting, prepare the lettuce leaves and toppings.
  5. Once the chickpeas are done, assemble the wraps by placing chickpeas, tomatoes, cucumber, and tahini sauce in each lettuce leaf.
  6. Season with salt and pepper to taste and serve immediately.

Notes

  • Feel free to add other toppings like avocado or pickled onions.
  • These wraps can be served warm or cold.
  • Store leftover chickpeas in an airtight container in the fridge for up to 3 days.
