Chickpea Shawarma Lettuce Wraps are a delicious and healthy alternative to traditional wraps, packed with flavor and nutrients.
Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 tablespoon shawarma spice blend
- 1 head of romaine lettuce, leaves separated
- 1 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup tahini sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with olive oil and shawarma spice blend.
- Spread the chickpeas on a baking sheet and roast for 20-25 minutes until crispy.
- While the chickpeas are roasting, prepare the lettuce leaves and toppings.
- Once the chickpeas are done, assemble the wraps by placing chickpeas, tomatoes, cucumber, and tahini sauce in each lettuce leaf.
- Season with salt and pepper to taste and serve immediately.
Notes
- Feel free to add other toppings like avocado or pickled onions.
- These wraps can be served warm or cold.
- Store leftover chickpeas in an airtight container in the fridge for up to 3 days.
