Ingredients

Scale
  • 2 large cucumbers
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon chili flakes
  • 1 lime, juiced
  • 1 clove garlic, minced

Instructions

  1. Wash and slice the cucumbers into thin rounds.
  2. In a bowl, mix the vinegar, water, sugar, salt, chili flakes, lime juice, and minced garlic until the sugar and salt dissolve.
  3. Add the cucumber slices to the mixture and stir to coat.
  4. Transfer the cucumbers and marinade to a jar or airtight container.
  5. Refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
  6. Serve chilled as a side dish or topping for tacos and salads.

Notes

  • These pickles can be stored in the refrigerator for up to a week.
