Description

Tender chicken thighs glazed in chipotle honey, served with creamy smoked gouda mashed potatoes for a comforting meal.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and diced
  • 2 tablespoons butter
  • 1/2 cup milk
  • 1/2 cup smoked gouda cheese, shredded

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine chipotle sauce, honey, smoked paprika, salt, and pepper in a mixing bowl.
  3. Coat each chicken thigh with the chipotle mixture.
  4. Place chicken thighs in a baking dish and bake for 25-30 minutes until golden and at an internal temperature of 165°F (75°C).
  5. Boil diced potatoes in salted water for about 15 minutes until fork-tender.
  6. Drain the potatoes, return them to the pot, and add butter, milk, and smoked gouda cheese.
  7. Mash until creamy, adjusting milk for desired consistency.
  8. Serve chicken over gouda mashed potatoes.

Notes

For deeper flavors, marinate the chicken overnight. An air fryer can also be used to cook the chicken thighs.
