- 4 chicken thighs, bone-in and skin-on
- 2 tablespoons chipotle sauce
- 2 tablespoons honey
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups potatoes, peeled and diced
- 2 tablespoons butter
- 1/2 cup milk
- 1/2 cup smoked gouda cheese, shredded
Instructions
- Preheat your oven to 400°F (200°C).
- Combine chipotle sauce, honey, smoked paprika, salt, and pepper in a mixing bowl.
- Coat each chicken thigh with the chipotle mixture.
- Place chicken thighs in a baking dish and bake for 25-30 minutes until golden and at an internal temperature of 165°F (75°C).
- Boil diced potatoes in salted water for about 15 minutes until fork-tender.
- Drain the potatoes, return them to the pot, and add butter, milk, and smoked gouda cheese.
- Mash until creamy, adjusting milk for desired consistency.
- Serve chicken over gouda mashed potatoes.
Notes
For deeper flavors, marinate the chicken overnight. An air fryer can also be used to cook the chicken thighs.
