- 3 large ripe bananas, mashed
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup melted coconut oil or light olive oil
- 1 teaspoon vanilla extract
- 1½ cups whole wheat flour
- ⅓ cup vanilla or unflavored protein powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon fine sea salt
- ½ cup dark chocolate chips (70% cocoa, no added sugar)
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9 x 5 inch loaf pan and line it with parchment paper.
- Mash the bananas in a large bowl until smooth.
- Whisk in the eggs, maple syrup or honey, melted coconut oil, and vanilla extract until well combined.
- In a separate medium bowl, whisk together the flour, protein powder, baking soda, baking powder, cinnamon, and salt.
- Gently fold the dry ingredients into the wet mixture.
- Carefully fold in the chocolate chips and nuts, if using.
- Pour the batter into your prepared loaf pan.
- Bake for 50 to 55 minutes, checking for doneness with a toothpick.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
Store the bread wrapped tightly for up to 3 days at room temperature or slice and freeze for up to 3 months. Reheat slices in a toaster or oven.
