Description

A delicious and nutritious bread made with ripe bananas, dark chocolate, and protein powder, perfect for breakfast or a snack.


Ingredients

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips (70% cocoa, no added sugar)
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 5 inch loaf pan and line it with parchment paper.
  3. Mash the bananas in a large bowl until smooth.
  4. Whisk in the eggs, maple syrup or honey, melted coconut oil, and vanilla extract until well combined.
  5. In a separate medium bowl, whisk together the flour, protein powder, baking soda, baking powder, cinnamon, and salt.
  6. Gently fold the dry ingredients into the wet mixture.
  7. Carefully fold in the chocolate chips and nuts, if using.
  8. Pour the batter into your prepared loaf pan.
  9. Bake for 50 to 55 minutes, checking for doneness with a toothpick.
  10. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Store the bread wrapped tightly for up to 3 days at room temperature or slice and freeze for up to 3 months. Reheat slices in a toaster or oven.
