Description

Ingredients

  • 1/2 cup unsweetened cocoa powder

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the grated zucchini, vegetable oil, eggs, and vanilla extract in a bowl.
  3. Whisk the cocoa powder, flour, baking powder, baking soda, salt, sugar, and brown sugar in another bowl.
  4. Add the dry ingredients to the wet ingredients, stirring gently until just combined.
  5. Fold in the chocolate chips to distribute them throughout the batter.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes in the pan before transferring to a wire rack to cool completely.
