- 1 lb flank steak
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1/2 cup corn
- 1/2 cup black beans, rinsed and drained
Instructions
- In a bowl, mix lime juice, cilantro, garlic, cumin, chili powder, salt, and pepper to create the marinade.
- Marinate the flank steak in the mixture for at least 30 minutes.
- Grill or pan-sear the steak over medium-high heat for about 5-7 minutes on each side, or until desired doneness.
- Let the steak rest for a few minutes before slicing it thinly.
- In serving bowls, layer cooked rice, sliced steak, cherry tomatoes, avocado, corn, and black beans.
- Drizzle with additional cilantro lime dressing if desired and serve immediately.
Notes
- For a spicier kick, add jalapeños to the bowls.
- This recipe can be made with chicken or tofu for a different protein option.
