- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1 tablespoon ground cinnamon (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, mix melted butter, milk, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix brown sugar and cinnamon for the filling.
- Fill each muffin cup halfway with batter, sprinkle with the cinnamon filling, then top with more batter until full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- While muffins are baking, prepare the glaze by mixing powdered sugar and milk until smooth.
- Once muffins are done, let them cool slightly before drizzling with glaze.
Notes
- For extra flavor, add chopped nuts or raisins to the filling.
- Store leftovers in an airtight container for up to 3 days.
- These muffins can be frozen for up to 2 months.
