Instructions
- In a large bowl, mix together the ricotta cheese, eggs, milk, and vanilla extract until well combined.
- In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- In a small bowl, mix the cinnamon and sugar to create the cinnamon swirl mixture.
- Heat a skillet over medium heat and melt a little butter.
- Pour 1/4 cup of pancake batter onto the skillet and swirl in a teaspoon of the cinnamon mixture.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter and cinnamon mixture.
- Serve warm with syrup or your favorite toppings.

- For a healthier option, you can use whole wheat flour instead of all-purpose flour.
