Description

Ingredients

  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 2 tablespoons butter (for cooking)

Instructions

  1. In a large bowl, mix together the ricotta cheese, eggs, milk, and vanilla extract until well combined.
  2. In another bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  4. In a small bowl, mix the cinnamon and sugar to create the cinnamon swirl mixture.
  5. Heat a skillet over medium heat and melt a little butter.
  6. Pour 1/4 cup of pancake batter onto the skillet and swirl in a teaspoon of the cinnamon mixture.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Repeat with the remaining batter and cinnamon mixture.
  9. Serve warm with syrup or your favorite toppings.
