- 1 lb shrimp, peeled and deveined
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 2 tablespoons lime juice
- 1 tablespoon lime zest
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and 1 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
- Pour in the coconut milk, lime juice, and lime zest. Stir to combine and let simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve the shrimp mixture over jasmine rice and garnish with fresh cilantro.
Notes
- For extra flavor, marinate the shrimp in lime juice and garlic for 30 minutes before cooking.
- Feel free to add vegetables like bell peppers or snap peas for added nutrition.
