Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and 1 1/2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  4. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Pour in the coconut milk, lime juice, and lime zest. Stir to combine and let simmer for another 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve the shrimp mixture over jasmine rice and garnish with fresh cilantro.
