Description

A delicious and savory rice slice made with corn, bacon, and zucchini, perfect for a snack or a light meal.


Ingredients

  • 1 cup cooked rice
  • 1 cup corn kernels
  • 4 strips of bacon, chopped
  • 1 medium zucchini, grated
  • 2 eggs
  • 1/2 cup grated cheese
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, combine the cooked rice, corn, chopped bacon, grated zucchini, eggs, grated cheese, and green onions.
  3. Season with salt and pepper, and mix well until all ingredients are combined.
  4. Pour the mixture into a greased baking dish and spread evenly.
  5. Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
  6. Allow to cool slightly before slicing and serving.

Notes

  • For a vegetarian option, omit the bacon and add more vegetables.
