- 1 cup cooked rice
- 1 cup corn kernels
- 4 strips of bacon, chopped
- 1 medium zucchini, grated
- 2 eggs
- 1/2 cup grated cheese
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, combine the cooked rice, corn, chopped bacon, grated zucchini, eggs, grated cheese, and green onions.
- Season with salt and pepper, and mix well until all ingredients are combined.
- Pour the mixture into a greased baking dish and spread evenly.
- Bake in the preheated oven for 30-35 minutes or until the top is golden brown.
- Allow to cool slightly before slicing and serving.
Notes
- For a vegetarian option, omit the bacon and add more vegetables.
- This dish can be served warm or cold.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
