Ingredients

- 2 cans of corn (15 oz each)
- 1 cup of sour cream
- 1 cup of cornmeal
- 1 cup of shredded cheddar cheese
- 1/2 cup of milk
- 1/2 cup of melted butter
- 1/4 cup of sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, sour cream, cornmeal, cheddar cheese, milk, melted butter, sugar, baking powder, and salt.
- Mix well until all ingredients are fully incorporated.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add diced jalapeños.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Leftovers can be reheated in the microwave or oven.
