- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups beef broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14 oz) diced tomatoes
- 2 cups frozen mixed vegetables
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat until cooked through. Drain any excess fat.
- Sauté the chopped onion and minced garlic until the onions turn translucent, about 3-4 minutes.
- Combine the beef broth, kidney beans, black beans, corn, diced tomatoes, and mixed vegetables. Stir until well combined.
- Add the chili powder, cumin, salt, and pepper. Stir to incorporate the spices thoroughly.
- Simmer the soup uncovered for about 30 minutes.
- Serve the Cowboy Soup into bowls and enjoy!
Notes
This soup tastes better the day after it’s made. Optionally cook in a slow cooker for easier preparation.
