Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 2 cups frozen mixed vegetables
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large pot over medium heat until cooked through. Drain any excess fat.
  2. Sauté the chopped onion and minced garlic until the onions turn translucent, about 3-4 minutes.
  3. Combine the beef broth, kidney beans, black beans, corn, diced tomatoes, and mixed vegetables. Stir until well combined.
  4. Add the chili powder, cumin, salt, and pepper. Stir to incorporate the spices thoroughly.
  5. Simmer the soup uncovered for about 30 minutes.
  6. Serve the Cowboy Soup into bowls and enjoy!

Notes

This soup tastes better the day after it’s made. Optionally cook in a slow cooker for easier preparation.
