Description

A hearty blend of ground beef, pork sausage, and chicken simmered with beans and spices, perfect for cozy gatherings.


Ingredients

  • 1 pound ground beef
  • 1 pound pork sausage
  • 1 pound diced chicken
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn kernels (fresh or frozen)
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef and sausage until fully cooked, breaking apart the meat with a wooden spoon.
  2. Add the diced chicken and cook until it is no longer pink, stirring occasionally.
  3. Incorporate the onion, bell pepper, and garlic and sauté until softened.
  4. Stir in the kidney beans, black beans, diced tomatoes, corn, and beef broth.
  5. Season with chili powder, cumin, salt, and pepper, stirring well.
  6. Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
  7. Serve hot, garnished with fresh herbs or sour cream if desired.

Notes

For a lighter stew, substitute sausage with ground turkey or plant-based alternatives. This stew also freezes well for up to 3 months.
