- 1 pound ground beef
- 1 pound pork sausage
- 1 pound diced chicken
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup corn kernels (fresh or frozen)
- 1 large onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the ground beef and sausage until fully cooked, breaking apart the meat with a wooden spoon.
- Add the diced chicken and cook until it is no longer pink, stirring occasionally.
- Incorporate the onion, bell pepper, and garlic and sauté until softened.
- Stir in the kidney beans, black beans, diced tomatoes, corn, and beef broth.
- Season with chili powder, cumin, salt, and pepper, stirring well.
- Bring to a simmer and cook for 20-30 minutes, stirring occasionally.
- Serve hot, garnished with fresh herbs or sour cream if desired.
Notes
For a lighter stew, substitute sausage with ground turkey or plant-based alternatives. This stew also freezes well for up to 3 months.
