- 2 medium sweet potatoes
- 1 cup cranberries (fresh or dried)
- 1 apple (peeled and diced)
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt to taste
- 2 tablespoons butter
- 1/4 cup plain Greek yogurt (optional for topping)
- Chopped pecans or walnuts (optional for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly, then poke holes with a fork. Place on a baking sheet.
- Bake for about 45 minutes or until tender.
- Combine cranberries, diced apple, brown sugar, cinnamon, nutmeg, and a pinch of salt in a medium saucepan over medium heat. Let simmer until thickened, about 10 minutes.
- Slice the baked sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
- Mash the sweet potato flesh with the cranberry-apple mixture and butter until smooth.
- Fill the sweet potato skins with the mixture and place back in the oven for another 15 minutes.
- Serve warm, topped with Greek yogurt and nuts if desired.
Notes
Feel free to prepare the cranberry-apple filling ahead of time. Experiment with spices and customize with additional ingredients like spinach for nutrition.
