Ingredients

  • 2 medium sweet potatoes
  • 1 cup cranberries (fresh or dried)
  • 1 apple (peeled and diced)
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Salt to taste
  • 2 tablespoons butter
  • 1/4 cup plain Greek yogurt (optional for topping)
  • Chopped pecans or walnuts (optional for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly, then poke holes with a fork. Place on a baking sheet.
  3. Bake for about 45 minutes or until tender.
  4. Combine cranberries, diced apple, brown sugar, cinnamon, nutmeg, and a pinch of salt in a medium saucepan over medium heat. Let simmer until thickened, about 10 minutes.
  5. Slice the baked sweet potatoes in half lengthwise and scoop out the flesh into a mixing bowl.
  6. Mash the sweet potato flesh with the cranberry-apple mixture and butter until smooth.
  7. Fill the sweet potato skins with the mixture and place back in the oven for another 15 minutes.
  8. Serve warm, topped with Greek yogurt and nuts if desired.

Notes

Feel free to prepare the cranberry-apple filling ahead of time. Experiment with spices and customize with additional ingredients like spinach for nutrition.
