- 8 oz cream cheese, softened
- 1/2 cup dried figs, chopped
- 1/2 cup dried cranberries, chopped
- 1/2 cup pistachios, chopped
- 1/4 cup honey
- 1 tsp vanilla extract
- 1/2 tsp salt
Instructions
- In a mixing bowl, combine the softened cream cheese, chopped figs, cranberries, honey, vanilla extract, and salt. Mix until all ingredients harmonize beautifully together.
- Lay down a piece of plastic wrap on a clean surface. Spoon the mixture onto the plastic wrap, and, with wet hands, shape it into a log.
- Tightly wrap the mixture in the plastic wrap, making sure to seal the ends completely, then refrigerate for at least 120 minutes until firm.
- After chilling, carefully unwrap the log. Roll it in the chopped pistachios until the entire surface is coated.
- Serve your cheese log with an array of crackers or slices of crusty bread.
Notes
For best flavor, make the cheese log a day in advance. Consider toasting the pistachios before coating for enhanced nuttiness.
