Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup dried figs, chopped
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pistachios, chopped
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. In a mixing bowl, combine the softened cream cheese, chopped figs, cranberries, honey, vanilla extract, and salt. Mix until all ingredients harmonize beautifully together.
  2. Lay down a piece of plastic wrap on a clean surface. Spoon the mixture onto the plastic wrap, and, with wet hands, shape it into a log.
  3. Tightly wrap the mixture in the plastic wrap, making sure to seal the ends completely, then refrigerate for at least 120 minutes until firm.
  4. After chilling, carefully unwrap the log. Roll it in the chopped pistachios until the entire surface is coated.
  5. Serve your cheese log with an array of crackers or slices of crusty bread.
