Ingredients

  • 1 pound beef meatballs
  • 8 ounces pasta (e.g., penne or rotini)
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the beef broth, chopped onion, and minced garlic in the crockpot.
  2. Add the beef meatballs, gently stirring to coat.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  5. Stir in the heavy cream and grated Parmesan cheese into the crockpot after the cooking time is up.
  6. Fold in the cooked pasta, mixing well.
  7. Season with salt and pepper as needed.
  8. Serve warm garnished with fresh parsley.

Notes

Prepare meatballs a day in advance for convenience. You can also combine the broth, onion, and garlic the night before.
