- 8 ounces elbow macaroni
- 6 hard-boiled eggs, chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup chopped green onions
- 1/4 cup sweet pickle relish
- Salt and pepper to taste
- Paprika for garnish
Instructions
- Cook the elbow macaroni according to package instructions; drain and let cool.
- In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, green onions, and sweet pickle relish.
- Add the cooled macaroni to the egg mixture and stir until well combined.
- Season with salt and pepper to taste.
- Transfer to a serving dish and sprinkle with paprika for garnish.
- Chill in the refrigerator for at least 30 minutes before serving.
