Description
A luxurious gratin featuring layers of sweet potatoes in a rich, creamy garlic and herb sauce, topped with bubbling cheese.

- 3 large sweet potatoes, peeled and thinly sliced into rounds
- 1.5 cups heavy cream
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- 1.5 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tbsp butter, melted
- Salt and black pepper to taste
- Fresh parsley, finely chopped (for garnish)
Instructions
- Preheat your oven to 190°C (375°F) and lightly grease a large baking dish with melted butter.
- Prepare the cream mixture by whisking together the heavy cream, minced garlic, melted butter, fresh thyme, salt, and pepper in a mixing bowl.
- Layer half of the sweet potato slices in an even layer across the bottom of the greased dish. Pour half of the creamy mixture over them, followed by half of the mozzarella and parmesan cheese.
- Repeat the layers with the remaining sweet potatoes, cream mixture, and sprinkle on the remaining cheese.
- Bake covered with aluminum foil for 30 minutes, then uncover and sprinkle the remaining cheese on top. Return to the oven uncovered for an additional 15 minutes.
- Garnish with finely chopped parsley before serving hot.
Notes
For extra crunch, sprinkle breadcrumbs on top before baking. Let the gratin rest for a few minutes after baking for perfect slices.
