- 1 cup heavy cream

- 4 medium potatoes
- 2 tablespoons butter
- 1/2 cup milk
- 3 cups carrots, sliced
- 2 tablespoons honey
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C) and season the chicken thighs with salt, pepper, and mixed herbs.
- Heat olive oil in a skillet over medium heat, then sear the chicken thighs for 4-5 minutes per side until golden-brown.
- Pour heavy cream over the chicken and transfer the skillet to the oven. Bake for 25-30 minutes until cooked through.
- Peel and cube the potatoes, then boil in salted water for approximately 15 minutes until tender.
- Drain potatoes and mash with butter and milk, adjusting seasoning as needed.
- Cook sliced carrots in a separate pan until tender, about 5 minutes. Drizzle with honey and caramelize for an additional 2-3 minutes.
