Ingredients

- 8 oz whole grain pasta
- 1 cup cooked chicken breast, diced
- 1 cup Greek yogurt
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, diced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the whole grain pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, diced chicken, Greek yogurt, cherry tomatoes, cucumber, red onion, and bell pepper.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the pasta salad and mix well to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
