Description

A delicious and nutritious creamy high protein pasta salad that is perfect for a quick meal or a side dish.


Ingredients

  • 8 oz whole grain pasta
  • 1 cup cooked chicken breast, diced
  • 1 cup Greek yogurt
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup bell pepper, diced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the whole grain pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, diced chicken, Greek yogurt, cherry tomatoes, cucumber, red onion, and bell pepper.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta salad and mix well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
