- 1 cup pumpkin puree
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spice
- 1 cup brewed coffee, cooled
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- In a mixing bowl, combine pumpkin puree, mascarpone cheese, heavy cream, sugar, vanilla extract, and pumpkin spice. Whip until smooth and creamy.
- Dip each ladyfinger into the cooled coffee for a few seconds, ensuring they are soaked but not soggy.
- Layer half of the soaked ladyfingers in the bottom of a serving dish.
- Spread half of the pumpkin mixture over the ladyfingers.
- Repeat the layers with the remaining ladyfingers and pumpkin mixture.
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder.
Notes
- For a stronger coffee flavor, use espresso instead of brewed coffee.
- Make sure to use pure pumpkin puree, not pumpkin pie filling.
- This dessert can be made a day in advance for better flavor.
