- 4 Boneless, skinless chicken breasts
- 1 tbsp Italian seasoning
- 2 tbsp Olive oil
- 1 cup Broccoli florets
- 1 cup Cherry tomatoes, halved
- 2 cups Fresh baby spinach
- 4 cloves Garlic, minced
- 1 cup Heavy cream
- 1/2 cup Chicken broth
- 1/2 cup Parmesan cheese, freshly grated
- Salt and crushed red pepper flakes to taste
- Fresh chopped parsley for garnish
Instructions
- Season the chicken: Generously sprinkle both sides with Italian seasoning, salt, and pepper.
- Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-6 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- Sauté the vegetables: In the same skillet, add minced garlic, broccoli florets, and cherry tomatoes. Sauté for 2-3 minutes until fragrant.
- Create the sauce: Pour in chicken broth and heavy cream. Simmer over medium-low heat, stirring. Add Parmesan cheese and let it melt and thicken.
- Incorporate spinach: Toss in fresh spinach and stir until wilted. Add crushed red pepper for heat if desired.
- Combine with chicken: Return seared chicken to the skillet, spoon sauce over the top, and let it simmer to meld flavors.
- Serve hot: Plate over rice or pasta, and garnish with fresh parsley.

You can prepare the chicken and sauce in advance. Store separately in the refrigerator.
