  • Oil for frying

Instructions

  1. Grate the potatoes and squeeze out excess moisture.
  2. In a large bowl, combine grated potatoes, corn, cheddar cheese, flour, green onions, egg, salt, and pepper.
  3. Mix until well combined.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the mixture into the hot oil and flatten slightly.
  6. Fry until golden brown on both sides, about 3-4 minutes per side.
  7. Remove from oil and drain on paper towels.
