Description

A comforting dish of tender beef chuck and egg noodles slow-cooked to perfection in a rich broth, perfect for chilly evenings.


Ingredients

  • 2 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 cups beef broth
  • 1 package (12 oz) egg noodles
  • 2 cups carrots, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a heavy skillet over medium heat. Once hot, add the beef chuck roast. Sear it until it’s beautifully browned on all sides, sealing in those delicious juices. Remove the beef and set aside.
  2. In the same skillet, toss in the chopped onion. Sauté until the onions turn translucent, releasing their sweet aroma—about 5 minutes.
  3. Place the browned beef roast in the crockpot. Top it with the sautéed onions, chopped carrots, garlic powder, and season generously with salt and pepper.
  4. Pour the beef broth over the entire mixture, enveloping it in its savory goodness.
  5. Cover and let it cook on low for 480 minutes or on high for 240 minutes. As it cooks, the beef will become tender, and the flavors will meld beautifully.
  6. About 30 minutes before you’re ready to serve, remove the beef from the crockpot. Use two forks to shred it into bite-sized pieces, and then return it to the pot.
  7. Stir in the egg noodles, cover, and cook on high for another 30 minutes, until the noodles become tender and soak up all the flavorful broth.
  8. Serve hot in bowls, garnished with fresh parsley for a lovely touch.
