Crockpot Beef Smokies, Potatoes, and Green Beans 🍲

  • Author: Stella

Ingredients

Scale

For the slow cooker

  • 450 g (about 1 lb) beef smokies (smoked beef sausages), cut into pieces
  • 700 g (about 1Β½ lb) small potatoes, halved or quartered
  • 450 g (about 1 lb) fresh green beans, trimmed
  • 1 medium onion, sliced
  • 3 garlic cloves, minced

For the seasoned broth

  • 250 ml (1 cup) beef broth
  • 3 tablespoons melted butter
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Β½ teaspoon onion powder
  • Β½ teaspoon dried thyme
  • Salt and black pepper, to taste

To finish

  • Chopped fresh parsley, optional

Instructions

Step 1: Prep the ingredients

Wash the potatoes and cut them into pieces of similar size so they cook evenly. Trim the green beans, slice the onion and mince the garlic. Cut the smoked sausages into thick rounds.

Step 2: Fill the slow cooker

Place the potatoes at the bottom of the Crockpot, since they take the longest to cook and benefit from sitting closest to the heat and liquid. Add the onion, garlic, green beans and sausage pieces on top.

Step 3: Mix the seasoning

In a bowl, whisk together the beef broth, melted butter, Worcestershire sauce, paprika, garlic powder, onion powder and thyme. Season with salt and black pepper to taste. Go easy on the salt at this stage, because the sausage and the broth are already salty.

Step 4: Cook low and slow

Pour the mixture over the ingredients and cover.

  • LOW: 6 to 7 hours
  • HIGH: 3 to 4 hours

Check that the potatoes are tender and that the green beans are cooked to your liking. If you prefer your green beans slightly crisp, add them during the last hour of cooking on LOW or the last 30 to 45 minutes on HIGH.

Step 5: Stir and serve

Gently stir everything so the ingredients are coated in the cooking juices. Taste and adjust the seasoning if needed. Sprinkle with fresh parsley and serve hot.

Pro Tips for the Best Results

1. Cut potatoes to a consistent size

Uneven pieces cook unevenly, so some will turn to mush while others stay firm. Aim for pieces about 3 to 4 cm (1ΒΌ to 1Β½ inches). If your potatoes are very small, simply halve them.

2. Choose the right potato

Baby potatoes, new potatoes, red potatoes and Yukon Golds hold their shape well in the slow cooker. Starchy russets break down more, which can thicken the broth slightly but may fall apart. If you use russets, cut them into larger chunks.

3. Layer thoughtfully

Putting potatoes at the bottom, where they are in contact with the liquid, helps them become tender. The green beans on top steam gently, and the sausage adds flavor as its juices drip downward.

4. Decide how you like your green beans

The recipe is very forgiving. If you love traditional, soft Southern-style green beans, add them at the start and let them cook the full time. If you like some snap, add them in the last hour on LOW or the last 30 to 45 minutes on HIGH.

5. Do not skip the butter

Three tablespoons of melted butter may not sound like much, but it gives the broth richness and carries the flavor of the spices through the dish. It makes the potatoes taste buttery without any further effort.

6. Control the salt

Smoked sausage and beef broth both contain a lot of sodium. Use low-sodium broth if you can, and wait until the end to taste and adjust before adding extra salt.

7. Resist peeking

Every time the lid is lifted, heat escapes and cooking time increases. Check only toward the end of the cooking window.

8. Stir gently

Potatoes and green beans soften as they cook, so stir carefully at the end to avoid breaking the potatoes into pieces.
