Description

A comforting and easy casserole featuring tender chicken, egg noodles, and a creamy sauce, perfect for busy weeknights and potlucks.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 can (10.5 oz) cream of chicken soup
  • 3 cups egg noodles, uncooked
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon onion powder (optional)

Instructions

  1. Gather all your ingredients. In a large mixing bowl, combine the shredded chicken, crumbled turkey bacon, cream of chicken soup, uncooked egg noodles, mixed vegetables, chicken broth, garlic powder, onion powder, salt, and pepper. Stir thoroughly until well mixed.
  2. Pour the mixture into your Crockpot, spreading it evenly.
  3. Cover your Crockpot and set it on low heat for 6-8 hours or high heat for 3-4 hours, until noodles are tender.
  4. Serve warm, optionally garnished with fresh parsley.

Notes

For make-ahead, prepare the ingredients the night before and store in the fridge. This casserole can also be baked in the oven at 350°F for 30-40 minutes.
