Description

A hearty and comforting stew made with seasoned beef, beans, and vibrant vegetables simmered in a rich broth.


Ingredients

  • 1 lb ground beef
  • 1 can diced tomatoes
  • 1 can kidney beans
  • 1 can black beans
  • 1 cup corn
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it up as it cooks until browned. Drain any excess fat.
  2. Transfer the browned beef to the crockpot.
  3. Add the diced tomatoes, kidney beans, black beans, corn, bell pepper, onion, garlic, and beef broth.
  4. Sprinkle in the chili powder, cumin, salt, and pepper.
  5. Stir well to combine all the ingredients.
  6. Set the slow cooker to cook on low for 6-8 hours or on high for 4 hours.
  7. Serve warm, with bread or over rice.

Notes

For a vegetarian version, substitute the ground beef and beef broth with plant-based alternatives.
