- 8 large eggs
- 1 cup whole milk
- 1 cup baby spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup onion, finely diced
- 1 cup cheddar or Swiss cheese, shredded
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 2 tbsp fresh chives or parsley, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and milk until smooth.
- Stir in the spinach, mushrooms, onion, and cheese.
- Add the olive oil, Italian seasoning, garlic powder, salt, and pepper; mix thoroughly.
- Pour the mixture into a greased pie dish.
- Bake for 30-35 minutes, until set and lightly golden.
- Remove from oven and let cool a few minutes before slicing.
- Garnish with chives or parsley before serving.
