Description

A light and hearty crustless quiche filled with fresh spinach, creamy ricotta, and a blend of cheeses, making it perfect for brunch or dinner.


Ingredients

  • 6 large eggs
  • 10 oz fresh spinach, chopped
  • 1 cup whole milk ricotta cheese
  • 1 cup Mozzarella or Cheddar, shredded
  • 1/2 cup Parmesan, finely grated
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup heavy cream or whole milk
  • 1/4 tsp ground nutmeg
  • Salt and pepper, to taste
  • Fresh herbs (rosemary or parsley), for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat, then add the onion and garlic, cooking until tender, about 3-5 minutes.
  3. Stir in the spinach and continue cooking until wilted, about 2-3 minutes.
  4. In a large bowl, whisk together the eggs, ricotta, heavy cream, nutmeg, and salt and pepper until combined.
  5. Mix in the cooked spinach, onion, and garlic, then fold in the Mozzarella or Cheddar and half of the Parmesan.
  6. Pour the mixture into a greased pie dish or baking pan.
  7. Bake for 35-40 minutes until the quiche is set in the center and lightly golden on top.
  8. Let it cool for a few minutes before slicing and garnish with fresh herbs.

Notes

You can prepare this quiche the night before and bake it in the morning. It also tastes great reheated.
