Description
A light and hearty crustless quiche filled with fresh spinach, creamy ricotta, and a blend of cheeses, making it perfect for brunch or dinner.

- 6 large eggs
- 10 oz fresh spinach, chopped
- 1 cup whole milk ricotta cheese
- 1 cup Mozzarella or Cheddar, shredded
- 1/2 cup Parmesan, finely grated
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/4 cup heavy cream or whole milk
- 1/4 tsp ground nutmeg
- Salt and pepper, to taste
- Fresh herbs (rosemary or parsley), for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat, then add the onion and garlic, cooking until tender, about 3-5 minutes.
- Stir in the spinach and continue cooking until wilted, about 2-3 minutes.
- In a large bowl, whisk together the eggs, ricotta, heavy cream, nutmeg, and salt and pepper until combined.
- Mix in the cooked spinach, onion, and garlic, then fold in the Mozzarella or Cheddar and half of the Parmesan.
- Pour the mixture into a greased pie dish or baking pan.
- Bake for 35-40 minutes until the quiche is set in the center and lightly golden on top.
- Let it cool for a few minutes before slicing and garnish with fresh herbs.
Notes
You can prepare this quiche the night before and bake it in the morning. It also tastes great reheated.
