- 6 large eggs
- 1 cup of mixed vegetables (carrots, peas, bell peppers)
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 1 tablespoon olive oil
- Fresh coriander for garnish
Instructions
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the mixed vegetables and cook for another 5 minutes.
- In a bowl, whisk together the eggs, milk, curry powder, salt, and pepper.
- Stir in the sautéed vegetables into the egg mixture.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the egg is set and the top is golden.
- Let it cool slightly before slicing and serving.
- Garnish with fresh coriander before serving.
