  • 6 large eggs
  • 1 cup of mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon curry powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • Fresh coriander for garnish

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent.
  3. Add the mixed vegetables and cook for another 5 minutes.
  4. In a bowl, whisk together the eggs, milk, curry powder, salt, and pepper.
  5. Stir in the sautéed vegetables into the egg mixture.
  6. Pour the mixture into a greased baking dish.
  7. Bake for 25-30 minutes or until the egg is set and the top is golden.
  8. Let it cool slightly before slicing and serving.
  9. Garnish with fresh coriander before serving.
