Ingredients

  • 1 large shallot, finely diced
  • 4 cups fresh spinach leaves, washed
  • 6 cloves garlic, minced
  • 2 lb beef roast (top round or sirloin)
  • Salt and pepper to taste
  • Olive oil (good-quality extra virgin)
  • Cooking twine

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat.
  3. Add the shallots and garlic, sauté for 3-4 minutes.
  4. Stir in the spinach and cook until wilted, seasoning with salt and pepper for about 2-3 minutes.
  5. Let the filling cool slightly.
  6. Butterfly the beef roast by slicing it horizontally without cutting all the way through.
  7. Fill the roast with the spinach mixture evenly.
  8. Roll the roast tightly and secure it with cooking twine.
  9. Season the outside with salt and pepper.
  10. Sear the roast in a hot pan with olive oil until browned on all sides.
  11. Transfer to the oven and roast for about 90 minutes or until desired doneness.
  12. Remove from the oven and let it rest for 10 minutes before slicing.
