- 1 large shallot, finely diced
- 4 cups fresh spinach leaves, washed
- 6 cloves garlic, minced
- 2 lb beef roast (top round or sirloin)
- Salt and pepper to taste
- Olive oil (good-quality extra virgin)
- Cooking twine
Instructions
- Preheat the oven to 350°F (175°C).
- Heat 2 tablespoons of olive oil in a skillet over medium heat.
- Add the shallots and garlic, sauté for 3-4 minutes.
- Stir in the spinach and cook until wilted, seasoning with salt and pepper for about 2-3 minutes.
- Let the filling cool slightly.
- Butterfly the beef roast by slicing it horizontally without cutting all the way through.
- Fill the roast with the spinach mixture evenly.
- Roll the roast tightly and secure it with cooking twine.
- Season the outside with salt and pepper.
- Sear the roast in a hot pan with olive oil until browned on all sides.
- Transfer to the oven and roast for about 90 minutes or until desired doneness.
- Remove from the oven and let it rest for 10 minutes before slicing.
Notes
Make ahead by preparing the filling a day in advance and refrigerating it until ready to use. Avoid overcooking the roast for juicy results.
