- 2 lbs Boneless skinless chicken breasts
- 3 medium Carrots, chopped
- 1.5 lbs Baby potatoes, halved
- 1 cup Green beans (added in the last hour)
- 1 medium Onion, diced
- 8 oz Cream cheese
- 1 cup Sour cream
- 3 cloves Garlic, minced
- 1 cup Chicken broth
- 1 teaspoon Dried thyme
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
Instructions
- Begin by preparing your vegetables. Dice the onion finely, chop the carrots into bite-sized pieces, and halve the baby potatoes.
- In your crockpot, layer the diced onion at the bottom.
- Place the chicken breasts gently on top of the onions.
- Sprinkle the carrots and potatoes over the chicken.
- In a mixing bowl, combine the cream cheese, sour cream, minced garlic, chicken broth, dried thyme, salt, and black pepper. Whisk until smooth.
- Pour the creamy mixture over the layered ingredients in the crockpot.
- Cover your crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- One hour before serving, gently add the green beans.
- Before serving, taste and adjust seasoning if necessary.
