Ingredients

  • 2 lbs Boneless skinless chicken breasts
  • 3 medium Carrots, chopped
  • 1.5 lbs Baby potatoes, halved
  • 1 cup Green beans (added in the last hour)
  • 1 medium Onion, diced
  • 8 oz Cream cheese
  • 1 cup Sour cream
  • 3 cloves Garlic, minced
  • 1 cup Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. Begin by preparing your vegetables. Dice the onion finely, chop the carrots into bite-sized pieces, and halve the baby potatoes.
  2. In your crockpot, layer the diced onion at the bottom.
  3. Place the chicken breasts gently on top of the onions.
  4. Sprinkle the carrots and potatoes over the chicken.
  5. In a mixing bowl, combine the cream cheese, sour cream, minced garlic, chicken broth, dried thyme, salt, and black pepper. Whisk until smooth.
  6. Pour the creamy mixture over the layered ingredients in the crockpot.
  7. Cover your crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  8. One hour before serving, gently add the green beans.
  9. Before serving, taste and adjust seasoning if necessary.
