  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 1 lime, juiced
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream or Greek yogurt
  • 1 tsp lime zest
  • 2 tbsp lime juice
  • 1 tbsp hot sauce
  • 3 cups cooked rice (white or brown)
  • 2 cups shredded cabbage
  • 1 cup cherry tomatoes, halved

Instructions

  1. Season the fish: Pat the fish fillets dry and rub with chili powder, smoked paprika, ground cumin, garlic powder, and salt.
  2. Heat the skillet: In a skillet, heat olive oil over medium-high heat and add the seasoned fish. Cook for 3-5 minutes on each side until flaked easily.
  3. Add lime juice: Squeeze lime juice over the cooked fish before removing from heat.
  4. Combine ingredients: In a bowl, mix mayonnaise and sour cream until smooth, then add lime zest, lime juice, and hot sauce.
  5. Whisk to perfection: Blend until creamy, adjusting spice to taste.
  6. Layer the base: In bowls, start with a scoop of cooked rice.
  7. Add the fish: Flake the fish over the rice.
  8. Top it off: Add cabbage, cherry tomatoes, and avocado slices.
  9. Drizzle and enjoy: Finish with spicy mayo on top.

Notes

You can marinate the fish up to an hour in advance for deeper flavors. The spicy mayo can be prepped the day before.
