Instructions
- Preheat your oven to 350°F (175°C) and generously grease your 9×5 inch loaf pan.
- In a large bowl, whisk together the grated zucchini, vegetable oil, sugar, eggs, and vanilla extract until combined.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- If using nuts, fold them in gently before pouring the batter into the prepared loaf pan.
- Bake for about 55-60 minutes until a toothpick comes out clean.
- Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For added richness, substitute melted butter for vegetable oil. Consider chilling the bread overnight for enhanced flavor.
