  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease your 9×5 inch loaf pan.
  2. In a large bowl, whisk together the grated zucchini, vegetable oil, sugar, eggs, and vanilla extract until combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  5. If using nuts, fold them in gently before pouring the batter into the prepared loaf pan.
  6. Bake for about 55-60 minutes until a toothpick comes out clean.
  7. Allow the loaf to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For added richness, substitute melted butter for vegetable oil. Consider chilling the bread overnight for enhanced flavor.
