Ingredients

  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups spinach or kale

Instructions

  1. Heat the olive oil in a large heavy-bottomed pot over medium heat until it shimmers.
  2. Sauté the onions, carrots, and celery until tender, about 5-7 minutes.
  3. Add the minced garlic, zucchini, and bell pepper; sauté for another 3-4 minutes.
  4. Pour in the vegetable broth and diced tomatoes, stirring to combine.
  5. Season with thyme, basil, salt, and pepper; bring to a gentle boil.
  6. Reduce the heat and let the soup simmer for 20-25 minutes.
  7. Stir in the spinach or kale until wilted.
