- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups spinach or kale
Instructions
- Heat the olive oil in a large heavy-bottomed pot over medium heat until it shimmers.
- Sauté the onions, carrots, and celery until tender, about 5-7 minutes.
- Add the minced garlic, zucchini, and bell pepper; sauté for another 3-4 minutes.
- Pour in the vegetable broth and diced tomatoes, stirring to combine.
- Season with thyme, basil, salt, and pepper; bring to a gentle boil.
- Reduce the heat and let the soup simmer for 20-25 minutes.
- Stir in the spinach or kale until wilted.
