  • 1 cup heavy cream
  • ¼ cup raspberry puree

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the pistachios until finely ground.
  3. In a bowl, mix ground pistachios, granulated sugar, and melted butter until combined.
  4. Press the mixture into the bottom of a springform pan to form the crust.
  5. Bake the crust for 10 minutes, then let it cool.
  6. In a large bowl, beat the cream cheese until smooth.
  7. Add powdered sugar and vanilla extract, mixing until well combined.
  8. Fold in the fresh raspberries gently.
