- 2 cups cooked, shredded chicken
- 1 bell pepper, diced
- 1 onion, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 cups cooked rice or quinoa
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked chicken, diced bell pepper, onion, black beans, corn, cooked rice or quinoa, salsa, chili powder, cumin, salt, and pepper in a large bowl.
- Spread the mixture evenly in a greased baking dish.
- Top with shredded cheese.
- Bake in the preheated oven for 25–30 minutes or until the cheese is melted and bubbly.
- Allow to cool for a few minutes before serving.
Notes
For added convenience, use pre-cooked chicken or frozen corn. Customize for dietary needs by swapping out ingredients as needed.
