A delicious and healthy recipe for falafel-spiced chicken meatballs served with a refreshing mint yogurt sauce.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1 egg, beaten
- 1 cup plain yogurt
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground chicken, breadcrumbs, parsley, cilantro, garlic, cumin, coriander, paprika, salt, black pepper, cayenne pepper, and beaten egg. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake the meatballs in the preheated oven for 20-25 minutes, or until cooked through and golden brown.
- While the meatballs are baking, prepare the mint yogurt sauce by mixing yogurt, mint, and lemon juice in a small bowl. Season with salt to taste.
- Serve the falafel-spiced chicken meatballs warm with the mint yogurt sauce on the side.
Notes
- For a spicier kick, add more cayenne pepper to the meatball mixture.
- These meatballs can be served as an appetizer or as a main dish with a side salad.
- Leftover meatballs can be stored in the refrigerator for up to 3 days.
