A delicious and healthy dish featuring sweet potatoes stuffed with falafel and drizzled with a garlic dill sauce.
Ingredients

- 4 medium sweet potatoes
- 1 cup cooked falafel
- 1/2 cup tahini
- 1/4 cup water
- 2 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
- While the sweet potatoes are baking, prepare the garlic dill sauce by mixing tahini, water, minced garlic, chopped dill, salt, and pepper in a bowl.
- Once the sweet potatoes are cooked, let them cool slightly, then slice them open.
- Stuff each sweet potato with cooked falafel.
- Drizzle the garlic dill sauce over the stuffed sweet potatoes.
- Serve warm and enjoy!
Notes
- For a spicier kick, add some cayenne pepper to the falafel mixture.
- These can be made ahead of time and reheated in the oven.
- Feel free to add toppings like avocado or fresh vegetables.
