Description

A delicious and healthy dish featuring sweet potatoes stuffed with falafel and drizzled with a garlic dill sauce.


Ingredients

  • 4 medium sweet potatoes
  • 1 cup cooked falafel
  • 1/2 cup tahini
  • 1/4 cup water
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then bake for 45-60 minutes until tender.
  3. While the sweet potatoes are baking, prepare the garlic dill sauce by mixing tahini, water, minced garlic, chopped dill, salt, and pepper in a bowl.
  4. Once the sweet potatoes are cooked, let them cool slightly, then slice them open.
  5. Stuff each sweet potato with cooked falafel.
  6. Drizzle the garlic dill sauce over the stuffed sweet potatoes.
  7. Serve warm and enjoy!

Notes

  • For a spicier kick, add some cayenne pepper to the falafel mixture.
  • These can be made ahead of time and reheated in the oven.
  • Feel free to add toppings like avocado or fresh vegetables.
