Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 sweet potato, peeled and cubed
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add sweet potato, zucchini, and bell pepper; cook for 5 minutes.
  5. Pour in vegetable broth and diced tomatoes.
  6. Add dried thyme, salt, and pepper; bring to a boil.
  7. Reduce heat and simmer for 20-25 minutes until vegetables are tender.
  8. Serve hot, garnished with fresh thyme.
