- 1 lb Chicken, beef, or tofu, cut into bite-sized pieces
- 1 cup Bell peppers, chopped
- 1 cup Onions, chopped
- 1 cup Zucchini, chopped
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Garlic powder
- Fresh herbs (Cilantro or parsley), for garnishing
- 1 cup Panko breadcrumbs
- 2 tbsp Olive oil
Instructions
- Prep Your Ingredients: Wash and chop your vegetables and proteins.
- Heat Up the Skillet: Add olive oil to a heated skillet.
- Cook the Protein: Add the protein and sizzle until golden brown, about 5–7 minutes.
- Add Vegetables and Spices: Toss in veggies and sprinkle spices, cooking for another 5–7 minutes.
- Combine & Prepare for Baking: Transfer mixture to a baking dish, add panko and drizzle oil.
- Bake to Perfection: Bake at 375°F (190°C) for 20–25 minutes.
- Garnish & Serve: Add fresh herbs before serving.
Notes
For a gluten-free version, omit breadcrumbs or use gluten-free alternatives. Prepare the dish ahead and refrigerate, baking just before serving.
