Description

A delicious and nutritious farro salad packed with fresh herbs, crunchy nuts, and sweet currants, perfect for any meal.


Ingredients

Scale
  • 1 cup farro
  • 2 cups water
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped walnuts
  • 1/4 cup dried currants
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the farro under cold water.
  2. In a pot, combine farro and water, bring to a boil, then reduce heat and simmer for about 30 minutes until tender.
  3. Drain any excess water and let the farro cool.
  4. In a large bowl, combine the cooled farro, parsley, mint, walnuts, and currants.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.
