Ingredients

- 1 cup farro
- 2 cups water
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped walnuts
- 1/4 cup dried currants
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the farro under cold water.
- In a pot, combine farro and water, bring to a boil, then reduce heat and simmer for about 30 minutes until tender.
- Drain any excess water and let the farro cool.
- In a large bowl, combine the cooled farro, parsley, mint, walnuts, and currants.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
