Ingredients

  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cups fresh green peas
  • 1 cup asparagus, chopped
  • 1 potato, diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (like thyme or parsley) for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, stir until translucent.
  3. Stir in the diced carrots and celery, letting them soften for five minutes.
  4. Pour in the vegetable broth and add the diced potato, bring to a boil and then reduce to a simmer.
  5. Incorporate sweet peas and chopped asparagus, cooking until tender.
  6. Stir in the heavy cream, season with salt and pepper.
  7. Garnish with fresh herbs before serving.

Notes

Make the soup ahead of time and add cream just before serving. You can also use an Instant Pot or slow cooker for convenience.
