Description

Ingredients

  • 4 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the minced garlic and sauté until fragrant.
  3. Add the shrimp to the skillet and cook until pink and opaque.
  4. In a separate bowl, combine black beans, corn, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
  5. Serve the garlic butter shrimp over the black bean salsa.

Notes

  • For extra flavor, add a pinch of cayenne pepper to the shrimp.
