A delicious and easy-to-make dish featuring succulent shrimp sautéed in garlic butter, served over a bed of black bean salsa.

- 1 lb shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 1 cup corn, fresh or frozen
- 1 red bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque.
- In a separate bowl, combine black beans, corn, red bell pepper, red onion, cilantro, lime juice, salt, and pepper to make the salsa.
- Serve the garlic butter shrimp over the black bean salsa.
Notes
- For extra flavor, add a pinch of cayenne pepper to the shrimp.
- This dish can be served with rice or quinoa for a heartier meal.
- Leftovers can be stored in the refrigerator for up to 2 days.
